Trofie al Pistacchio e Gamberetti

  • Extra virgin olive oil (EVO)
  • Salt and pepper to taste
  • Fresh chopped parsley
  • Grated lemon zest (optional, for a touch of freshness)

Instructions:

  1. Prepare the pistachio cream:
    In a food processor, blend the pistachios with a drizzle of EVO oil and a tablespoon of hot water until smooth. If necessary, add some cream or spreadable cheese to make the mixture creamier.
  2. Cook the shrimp:
    In a large pan, heat a drizzle of EVO oil with a garlic clove. Add the shrimp and sauté for 2-3 minutes until they turn pink. Season with salt and pepper and, if desired, deglaze with a splash of white wine.
  3. Cook the pasta:
    Bring plenty of salted water to a boil and cook the trofie until al dente. Before draining, reserve a ladle of the pasta cooking water.
  4. Combine the ingredients:
    Pour the pistachio cream into the pan with the shrimp, add a bit of pasta cooking water to help coat everything. Add the drained trofie and toss well to combine the flavors.
  5. Plate and serve:
    Divide the pasta among the plates, garnish with pistachio crumbs, fresh chopped parsley, and, if desired, a sprinkle of lemon zest for a touch of freshness.
